It’s finally starting to feel like spring here in Minnesota. To go with it, I’ve whipped up a few Easter treats that will be perfect for you to make with the family or serve as a party favor!

 

Strawberry Carrots
This one is a favorite! Chocolate dipped strawberry ‘carrots.’ I originally saw these in a Harry & David magazine and knew I had to create my own version. They’re very simple to make and will have your friends and family “oohing and awing” over them!

Whether your tradition for Easter is full of arts and crafts, baking magnificent meals and Easter egg hunts or brunch with the family at your favorite neighborhood restaurant, Easter is a colorful time of year in Minnesota.

The sun is shining longer, the snow is melting, flowers are starting to bloom and shorts weather is just around the corner. But before you head off to Mexico or Florida for spring break, be sure to have your plan for Easter in place! I know I’m not alone when I say it’s time for spring to get here. Minnesotans are so resilient when it comes to winter – not even a snow storm can stop us! But after a while it’s time for the snow to melt. Unfortunately that won’t be happening any time soon. We can live in a little bit of denial and start thinking about spring with treats from our bakery!

Our ultimate spring item of course is the angel food cake. In small and large sizes, it’s just that perfect base for your fresh strawberries and whipped cream. We’ve got a new gluten-free chiffon cake from Down in the Valley now, too – be sure to give it a try!

How to use leftover Easter ham

Now that you’ve cooked your famous Easter ham, washed the mound of dishes and said goodbye to the relatives, what do you do with the leftovers? Instead of giving them away to your kids, use them in other dishes!



My favorite way to use leftover ham is to make my almost as famous ham and wild rice soup. You can’t get more Minnesotan than that. Along with the delicious nutty flavor, I like the fact that wild rice has higher protein content than white rice, corn or wheat.
