Raising the bar on our salad bars

Most people think of a salad as lettuce, a little shredded carrots and dressing. Not me! A good salad is satisfying and can pack so many great flavors and textures. I put all kinds of delicious ingredients in my salad, like roasted vegetables, grains, nuts, dried fruit and even top it off with a boost or two. A boost is commonly thought of as something you add to a smoothie for added nutrients, like flax meal or nutritional yeast, but boosts are fantastic on salads too.

When I make salad at home, I know what’s going into it and I feel good about it; that’s why I wanted to help create the same feeling in our salad bars. So the deli team and I went back to the drawing board to make sure our salad bar offerings were fresh, healthy and unique. Now you can get a salad at Lunds and Byerly’s with all kinds of new and delicious ingredients.





Lunds and Byerly’s new and improved salad bars include:

  • Greens (not just lettuce), including lemon sesame kale, arugula, watercress and fresh herbs
  • Whole grains and beans
  • Roasted fresh vegetables , like green beans with garlic, fennel and baby herbed potatoes
  • Daily composed salads ranging from iceberg wedges with blue cheese to mini butter lettuce heads filled with fresh mozzarella and tomatoes drizzled with balsamic and olive oil
  • A variety of fresh raw and daily steamed vegetables
  • Boosts such as flax meal, chia seeds and nutritional yeast

Top it all off with our scrumptious signature dressings, nuts and some dried fruit – delicious and nutritious!

So make your next stop at the bar be at our salad bar. I guarantee you’ll feel good about it.

    What a great change!
    This transformation has made me a fan for life:)(the salad bar being on sale right now for $5.99/# doesn't hurt either!)
    Now, I can eat responsibly and not have to compromise on flavor or variety!

    Went to the Golden Valley Byerly's to try out the salad bar since it is on sale, was surprised to see a line of about 15 people for the salad bar! Anyways very impressed, looks and tastes great! One suggestion, why do you have what looks like the lettuce used for a Big Mac in with all the high class/health options, it brings down the entire salad bar. None the less great job, great to see you moving in the right direction.

    Love the new salad bar and the price right now, $5.99, is great. The salad bar on surburban ave. must be popular because it's never stocked. I always have to ask the lady behind the deli counter for more lettuce.
    Thanks for the great selection of items. Now I'm hungry for a salad.

    The changes are nice...except...I'm a longtime loyal fan with an onion allergy and it wasn't fun to show up and find that my only spinach option was spinach already in salad mix with red onions. Just keep the staple greens (spinach for me please) available separately and this will all be great. I know it's hard to please everyone but thanks for considering this. Hate to make the lunchroom run there and find I can't get my salad.

    P.S. LOVE the chia seeds! I've also inquired previously about the type of cottage cheese (4%, 2%, etc) and was told I'd have to ask the deli manager on duty at the store to find out since it likely changes - there's never time for that. Can you just put it on the label?

    You have the best salad bar! Thanks for adding more greens, whole grains, beans, chia seeds, nutritional yeast, and making sure things are fresh. I started following a vegan lifestyle 2 years ago and you are making it easier and tastier!

    Although it's great that the price of items has been reduced, I'm still finding neglected care of salad bar items at several of the Byerlys stores. I've asked many times for staff to make sure cleanliness is maintained, but it hasn't been. I find myself buying packaged salad ingredients and fixing my own salad at home instead of more conveniently bringing home salad from salad bars. As a retired RN, cleanliness matters a lot to me.

    Your salad bar has been fantastic since the beginning! So many salad bars offer spinach or iceberg lettuce. Not Lunds! The grilled romaine, the sesame kale, the baby greens and the micro greens! I can't get enough. Then you added tofu which is delilcious, and the nutritional yeast and chia seeds. Finally, a salad bar that is what a salad bar should be. Yummy and healthy! I just love it. Keep up the great work.

    Itʻs been a while since Iʻve bought from the salad bar, but at $5.99 it sounds super! The spring mix used to be organic. Is it still? It wasnʻt labeled as such, but the deli employees told me it was. I buy organic to make my own, so that is what I would want to eat from a salad bar as well.

    I agree with the person who asked for the ingredients to be separate for us to make our own combinations.

    @Cynthia: thanks for letting me know. I have passed this information on to the deli manager at Ford Parkway. An unstocked salad bar is not too fun to shop so we will be sure to change that!

    @Julia: what store do you shop at? I'll be sure to let the deli manager know about keeping fresh spinach in the greens offerings. Many of our stores offer fresh spinach daily so that is an easy fix. Also, we offer 2% with our cottage cheese.

    @Sue: 1 oz of chia seeds offer 4 grams of protein adn 11 grams of fiber! Load 'um up is what I do on my salad, great crunch too.

    @Carolyn: Clean, well stocked and fresh items in the salad bar is the goal for all our deli's. Consistency is something we are constantly striving for.     @Teri, thank you!

    @SJ: Yes, our spring mix is organic. We do not label it as organic due to labeling regulations for the bulk deli foods area. Also, we try to offer enough single ingredients for folks to make their own unique salad, and for those that want something prepared, we have a couple of those offerings as well.

    To ALL of you, thanks for shopping with us. We love hearing your feedback. Also, keep your eyes out for some new yummy winter offerings on the salad bar coming in Feb. New seasonal options is part of improved plan. And, of course, if you have certain vegetables you'd like to see let me know.
