Angelic Peach Melba Cloud
Ingredients
- 3 pounds peaches, pitted and sliced
- 4 tablespoons sugar, divided
- 2 cups heavy whipping cream
- 8 tablespoons peach Schnapps, divided
- 1 (17-ounce) Lunds Angel Food Cake, cut into 1 1/2-inch cubes
- 1 (9-ounce) bottle Terrapin Ridge Red Raspberry Dessert Squeeze
- fresh mint leaves, optional
Directions
Combine peach slices and 2 tablespoons sugar; set aside.
In mixing bowl combine cream, remaining 2 tablespoons sugar, and 2 tablespoons peach Schnapps. Whip until stiff peaks form; set aside.
Place one-third angel food cubes in large decorative bowl. Drizzle 2 tablespoons peach Schnapps over cake. Drizzle 2 to 3 tablespoons raspberry squeeze over cake. Spoon one-third peach slices over and top with one-third whipped cream. Repeat layers twice. Cover and chill 4 hours or overnight.
To Serve: Garnish with additional raspberry squeeze and mint, if desired.
