  • 2 tablespoons Lunds and Byerly's Chimichurri seasoning
  • 2 tablespoons hot tap water
  • 1/3 cup Extra Virgin Olive Oil
  • 1 tablespoon sherry vinegar
  • 3 teaspoons grated lemon zest, divided
  • 1 pound 16-20 count shrimp, peeled, deveined
  • 1 bunch green onion, sliced
  • 1 large red bell pepper, cut into 1/2 inch wide strips
  • 1 large yellow bell pepper, cut into 1/2 inch wide strips
  • 1 large orange bell pepper, cut into 1/2 inch wide strips
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 2 1/2 cups cooked rice
