Stir-Fried Shrimp Snow Pea and Walnut Salad


Ingredients
  • 1 (12 ounce) Royal Asia Crispy Walnut Shrimp
  • 1 tablespoon water
  • 1 tablespoon + 1 teaspoon white wine vinegar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon International Collection Toasted Sesame Oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon canola oil
  • 1/4 pound snow peas, trimmed
  • 4 cups mixed salad greens
Directions

Cook shrimp according to package directions; transfer to bowl. Thaw sauce and walnut packets according to package directions.

In small bowl, combine water, vinegar, soy sauce, sesame oil, salt and pepper. Stir in sauce packet; set aside.

In non-stick skillet, heat oil over medium-high heat until hot (about 2 minutes). Add walnuts; stir-fry for 30 seconds. Add snow peas; continue to stir-fry until snow peas are crisp-tender (about 45 seconds). Add to bowl with prepared shrimp; toss to coat.

In large bowl, toss greens with sauce packet mixture. Divide greens between 2 dinner plates; top with shrimp mixture. Serve immediately.
