Can it be? The Minnesota State Fair underway, school bus information in the mail, the evenings getting cooler and shorter...I’m not ready for summer to be over yet!
As my oldest starts kindergarten next month, I’m starting to be on the look-out for fresh and easy lunch ideas to pack for her. I suppose I can’t just pack PB & J every day. She’s my picky eater so I’ve got to be creative!
A new-found favorite at our house is Lunds and Byerly’s multigrain sandwich bread. We’ve finally found a great bread that will stay soft on the counter as we use it up for the week. The kids love it and I feel good about serving it to them. I’m going to try making turkey and cheese sandwiches using a cookie cutter to make fun shapes out of it. That’ll make lunch packing fun for me and lunch time fun for them!
My kids’ favorites are little sandwiches on our whole wheat party buns. Soft bread that fits right in their little hands, this bread is perfect for school. I can fit two buns in a sandwich baggie and slide them right into my daughter’s lunch bag. It breaks up the monotony of typical sandwich bread every day.
The old stand-by for the adults in our house is our 100% whole wheat bread. This is our favorite all-natural sandwich bread. Mmm...thin slices of ham, Swiss cheese, lettuce, tomato and mayo is the classic sandwich at our house. Toasting it with a big dollop of peanut butter is also a great breakfast idea. Easy, delicious and portable!
But before school starts, we can still hang on to the flavors of summer with the classic BLT. Our Vienna sandwich bread makes a great base for the tomatoes straight out of the garden paired with some maple-smoked bacon, fresh lettuce and mayonnaise. My mouth just waters thinking about this late-summer treat.
So we’ll treasure these last few weeks of summer and start plan for school routines coming up. I can’t wait to see what my daughter will learn this year!
