15-Minute Cod Sandwiches with Aioli & Arugula

Ingredients
2 - 6-ounce cod fillets
L&B Gone Fishin' Fish Seasoning
2 teaspoons olive oil + more for drizzling
2 small handfuls baby arugula
Squeeze of fresh lemon juice
Salt, to taste
Pepper, to taste
2 hearty sandwich rolls or baguette halves, toasted
Aioli of choice
OPTIONAL SANDWICH TOPPINGS: Fresh cucumber slices
Fresh tomato slices
Red onion slices
Directions
- Pat cod fillets dry with paper towels. Season generously with L&B Gone Fishin' Fish Seasoning.
- In nonstick skillet, heat olive oil over medium heat; add cod and sauté until golden and thickest part of fish flakes easily with fork, turning once (8-10 minutes). Transfer cod to plate and cover with foil.
- In small bowl, toss arugula with a squeeze of fresh lemon juice, a drizzle of olive oil and salt and pepper.
- Slather the bottom of the toasted sandwich rolls or baguette halves with aioli. Top with cooked cod fillets and dressed greens. Complete the sandwiches with the toasted bread tops.
- You may also top the cod with fresh cucumber, tomato or red onion slices.
