- Heat a cast iron pan or large fry pan over medium-high heat.
- Add 1 tablespoon high-heat cooking oil such as ghee, grapeseed or avocado oil to pan; swirl to coat.
- Add lamb chops to pan. Cook until desired doneness, about 3-4 minutes per side for medium-rare - internal temperature registers 130 F. Remove pan from heat; let chops rest 5 minutes before serving.
