Ingredients
1 puff pastry sheet, thawed
Ripe peaches
Cinnamon
2 tablespoons unsalted butter, cut into chunks
1 egg, beaten
Directions
  1. Heat oven to 400 F. 
  2. Bring puff pastry to room temperature. Gently unfold or roll out the dough and, using a sharp knife, score it about 1 inch from the edge, making a rectangle all the way around. Inside the rectangle, pierce the dough every ½ inch or so to prevent bubbles. 
  3. Pit and slice peaches. 
  4. Layer the peach slices on top of the pierced dough and sprinkle with ground cinnamon. 
  5. Chop 2 tablespoons unsalted butter and distribute evenly over the peaches. 
  6. Brush the visible dough with one beaten egg. 
  7. Bake for 15-18 minutes.

TIP: For additional sweetness, sprinkle some sugar with the cinnamon over the peaches.
