Ingredients
3 tablespoons extra virgin olive oil, divided
2 medium onions, sliced
1/4 scant cup apple brandy
1 L&B Baguette, sliced
1-2 Honeycrisp apples, thinly sliced
Shredded Gruyère cheese
Directions
  1. Heat oven to 375 F.
  2. Add 1 tablespoon olive oil to a medium skillet and heat over medium-low. Add onions and let them caramelize, about 30-45 minutes, stirring frequently.
  3. Add apple brandy and cook until evaporated.
  4. Brush baguette slices with remaining olive oil and bake for 3-5 minutes, until slightly browned.
  5. Remove from oven and top with onions, apple slices and shredded Gruyère. (Provolone and Brie also work well.)
  6. Return to oven and broil until cheese starts to melt, 2-4 minutes.
