Ingredients
2 cups butter, softened
2 cups sugar
1 egg, room temperature
1 teaspoon vanilla extract
4 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Directions
  1. In mixer bowl, beat butter, sugar, egg and vanilla until fluffy.
  2. Combine remaining ingredients; stir into sugar mixture just until blended. Refrigerate, covered.
  3. Preheat oven to 375 degrees.
  4. FOR COOKIE CUT-OUTS: Roll part of dough 1/8-inch thick on lightly floured surface; keep remainder of dough refrigerated.
  5. Cut with cookie cutters; place on ungreased baking sheets.
  6. Sprinkle with sugar (optional).
  7. Bake until set, but not brown (6-8 minutes). Remove to wire racks to cool.

Makes approximately 8-9 dozen cookies (96-108 cookies), depending on the size of each cookie. 

  1. FOR MOLDED COOKIES: Shape dough into 1-inch balls; place 2 inches apart on ungreased baking sheets.
  2. Flatten with bottom of sugared glass, ceramic cookie press or fork.
  3. Bake until set, but not brown (8-10 minutes). Remove to wire racks to cool.

Makes approximately 8-9 dozen cookies (96-108 cookies), depending on the size of each cookie. 

  1. FOR SPRITZ COOKIES: Force dough through cookie press, following manufacturer's directions, onto ungreased baking sheets.
  2. Bake until set, but not brown (7-9 minutes). Remove to wire racks to cool.

Makes approximately 10 dozen cookies (120 cookies), depending on the size of each cookie. 

TIP: Ensure cookies cool completely before decorating, otherwise any icings, sprinkles and more may melt when applied.
