Instant Pot Tandoori Chicken

Ingredients
1 ½ pounds chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon curry powder
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon ground turmeric
1 teaspoon paprika
½ teaspoon chili powder
¼ teaspoon cayenne pepper
1 tablespoon fresh minced ginger
½ teaspoon salt
1 - 14-ounce can coconut milk
Fresh cilantro, for topping
Directions
- Place all ingredients in Instant Pot or pressure cooker.
- Secure lid and cook on high pressure for 10 minutes.
- Let pressure naturally release for 10 minutes and then release the valve.
- Serve on top of coconut rice, in lettuce wraps, or with naan. Enjoy!
COCONUT RICE: Simply replace most of the cooking water for basmati rice with coconut milk.
