Ingredients
2 1/2 cups Flour
1 teaspoon salt
4 ounce shredded Cheddar cheese, (optional)
1 cup vegetable shortening
1 egg yolk, beaten
Milk, to measure 2/3 cup with egg yolk
10 cups thinly sliced, pared apples
1 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup coarsely crushed corn flakes
1 egg white
Directions
  1. Combine flour, salt, and shredded cheese into a mixing bowl.
  2. Cut in shortening with a pastry blender until the mixture resembles coarse crumbs.
  3. Toss the flour mixture with liquid (such as water or milk) until all the flour is moistened.
  4. Form the dough into two balls and refrigerate covered.
  5. Toss apples with sugar, cinnamon, and nutmeg.
  6. Roll out one ball of dough to fit the bottom and sides of a 10x15-inch jelly roll pan.
  7. Sprinkle cereal over the crust.
  8. Spread the apple mixture over the crust.
  9. Roll out the remaining dough and place it over the apples.
  10. Seal the edges of the crust and make slits on top with a knife.
  11. Beat egg white until stiff and brush it over the crust.
  12. Bake in a preheated 375°F oven until golden brown, about 1 hour.
  13. TIPS TO ROLL OUT PASTRY: Shape the ball of dough into a flattened round on a lightly floured cloth-covered board. Roll out with a floured stockinette-covered rolling pin to about 1 inch larger than the inverted pan. To place in the pan, roll the crust around the rolling pin, then unroll it into the pan.
