
Summer Sheet-Pan Salmon
A small list of ingredients and a sheet pan are all you need to serve a meal that makes you feel (and look) like a gourmet chef, even if you’ve only spent 30 minutes in the kitchen.

Ingredients
1 - 2 pound salmon fillet, skin on
Kosher salt, to taste
1 ½ cups fresh corn kernels
2 cups multicolored cherry tomatoes, halved
1 shallot, thinly sliced
2 garlic cloves, minced
2 tablespoons extra virgin olive oil
1 teaspoon ground turmeric
½ teaspoon ground cumin
½ teaspoon ground coriander
Juice of one lime
1 teaspoon maple syrup
Chopped cilantro, for garnish
Directions
- Heat the oven to 350 F.
- Place the salmon fillet skin side down on a rimmed sheet pan. Season with salt.
- In a large bowl, combine the corn, cherry tomatoes, shallot, garlic, olive oil, turmeric, cumin and coriander. Season with salt and toss to coat. Arrange the vegetables around the salmon on the sheet pan.
- Bake for 15 to 17 minutes or until the salmon is easily flaked with a fork.
- In a small bowl, whisk together the lime juice and maple syrup.
- Brush the salmon with the maple lime dressing, garnish with cilantro, and serve.
