We put it on top of a burger, which is amazing. But it’s also great on deli sandwiches in the afternoon, eggs in the morning, crackers and goat cheese in the cocktail hour… the applications are endless!

Bacon Jam

Ingredients
12 ounces L&B Hickory Smoked Bourbon Bacon, medium diced
2 tablespoons unsalted butter
1 large sweet onion, small diced
2 medium shallots, small diced
3 garlic cloves, minced
¾ cup apple cider vinegar
¼ cup maple syrup
¼ cup packed brown sugar
¼ cup brewed coffee, cooled
Pinch cayenne pepper
Freshly ground black pepper, to taste
Kosher salt, to taste
Directions
- In a medium pot, add the diced bacon and sauté over medium heat until crispy, about 10 minutes. Transfer the bacon to a paper towel-lined plate. Discard all but 1 tablespoon of the bacon fat.
- Add the butter, onion, shallot, and garlic and cook until the butter melts and the onions are softened, about 5 minutes.
- Stir in the apple cider vinegar, maple syrup, brown sugar, coffee, and a pinch of cayenne pepper. Bring to a simmer.
- Add the bacon and simmer, stirring occasionally, for 1 hour until the jam is deep golden and coats the back of a spoon. Season with salt and black pepper.
- Serve immediately or transfer to an airtight container. Leftover bacon jam can be stored in the refrigerator for up to 5 days.
TIP: Makes an excellent topper for holiday roasts including chicken, turkey and pork and for comfort foods such as meatloaf, pizza, pasta, mashed potatoes and mac & cheese.
