Bacon and Apple Sweet Potato Casserole with Pecan Streusel

Ingredients
Cooking spray
1 tablespoon olive oil 
1 yellow onion, diced 
6 slices bacon, cut into 1/2 
4 cups diced sweet potatoes 
2 large gala apples, peeled, core removed, and diced 
1 teaspoon ground cinnamon 
1/4 teaspoon nutmeg 
2 tablespoons brown sugar 
1/2 teaspoon salt 
FOR THE PECAN STREUSEL: 1/3 cup melted butter 
1/3 cup brown sugar 
1/2 cup flour
1/4 teaspoon salt 
1 cup chopped pecans 
Directions
- Heat oven to 350 degrees F. Spray 9x13-inch baking dish with cooking spray and set aside.
 - In large skillet, heat olive oil over medium heat. Add onions and bacon pieces and cook until onions are translucent and bacon is cooked, about 10-12 minutes.
 - In large bowl, combine sweet potatoes, apples, and onion/bacon mixture, including any grease from the bacon. Add cinnamon, nutmeg, brown sugar, and salt and stir well to combine. Pour into prepared baking dish.
 - TO MAKE PECAN TOPPING: Combine melted butter, brown sugar, flour, salt, and diced pecans. Sprinkle mixture over sweet potato mixture.
 - Bake in oven for 50-60 minutes, until mixture is thoroughly cooked and golden brown.
