Ingredients
Cooking spray
1 tablespoon olive oil
1 yellow onion, diced
6 slices bacon, cut into 1/2
4 cups diced sweet potatoes
2 large gala apples, peeled, core removed, and diced
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons brown sugar
1/2 teaspoon salt
FOR THE PECAN STREUSEL: 1/3 cup melted butter
1/3 cup brown sugar
1/2 cup flour
1/4 teaspoon salt
1 cup chopped pecans
Directions
  1. Heat oven to 350 degrees F. Spray 9x13-inch baking dish with cooking spray and set aside.
  2. In large skillet, heat olive oil over medium heat. Add onions and bacon pieces and cook until onions are translucent and bacon is cooked, about 10-12 minutes.
  3. In large bowl, combine sweet potatoes, apples, and onion/bacon mixture, including any grease from the bacon. Add cinnamon, nutmeg, brown sugar, and salt and stir well to combine. Pour into prepared baking dish.
  4. TO MAKE PECAN TOPPING: Combine melted butter, brown sugar, flour, salt, and diced pecans. Sprinkle mixture over sweet potato mixture.
  5. Bake in oven for 50-60 minutes, until mixture is thoroughly cooked and golden brown.
