10-Minute Grilled Lamb Chops

Lamb chops
High-heat cooking oil
Seasoning of choice
Directions
- Heat grill or cast-iron grill pan over high heat. If using charcoal grill, build fire so that one side of the grill has more coals than the other – a “hot” side. If using grill pan, heat oven to 400 F.
- Rub lamb chops with your cooking oil and your favorite seasoning.
- If grilling, place on the hot side for 2 minutes per side. Move chops to the grill's cooler side to cook through, an additional 6-7 minutes. If using grill pan, grill one side for 2 minutes; turn over the chops. Place the pan in the oven for 5-6 minutes. Remove from the grill or oven; allow to sit 5 minutes before serving.
PREFERRED DONENESS FINAL INTERNAL TEMPERATURE:
Medium Rare 145 F
