
Mashed Potato Waffles
These savory waffles are a great way to use leftover mashed potatoes.

Ingredients
½ cup L&B Minnesota Pancake Mix
1 egg
â…“ cup water
1 tablespoon vegetable oil
1 cup mashed potatoes
chopped chives, for serving
chopped cooked bacon, for serving
Directions
- Heat waffle iron according to manufacturer instructions.
- In a mixing bowl, combine the pancake mix, egg, water, vegetable oil and mashed potatoes.
- Once the waffle iron is ready, spray it with cooking spray and pour the batter into the iron.
- Close and wait until waffle is browned and baked through.
- Garnish the waffles with the chives and bacon.
