
Potato Hash Skillet Dip
This hearty meat-and-potatoes lovers dip is a meal in itself. Perfect for binge-watching sports or for a family-friendly movie night.

Potato Hash Skillet Dip

Ingredients
4 tablespoon cooking oil, divided
1 diced onion
1 diced bell pepper
1 lb. ground beef
1 - 20-ounce package refrigerated hash browns
Corn chips, for serving
Fresh salsa or pico de gallo, for serving
Hot sauce, for serving
Directions
- In a skillet over medium-high heat, heat cooking oil.
- Add onion and bell pepper; cook for 10 minutes.
- Add ground beef; cook until browned. Remove beef-veggie mixture from pan and set aside.
- Add 2 more tablespoons cooking oil to the pan. Once hot, add the hash browns. Press down on them lightly. Cook for 6-8 minutes or until slightly crispy. Drizzle with another 1 tablespoon cooking oil and flip. Cook another 6-8 minutes or until slightly crispy.
- Add beef and veggies back to the pan and mix together with the hash browns. Heat until mixture is completely heated through.
- Serve with corn chips, fresh salsa and hot sauce, if desired.
TIP: Make it cheesy by adding shredded cheese with the beef and veg mixture in Step 5, ensuring cheese completely melts before serving.
