Kimchi Kraze Elk Burger
This recipe uses ground elk in place of ground beef. Fossil Farms’ elk are grass-fed and are never given antibiotics, steroids or hormones. With a similar color, elk tastes like a cross between venison and beef. Fossil Farms is a pioneer in healthy and sustainable alternatives to conventional red meat. They specialize in providing the highest-quality farm-raised game, game birds, exotic meats and all natural meats in the country.

Ingredients
1 1-lb. package Fossil Farms Ground Elk
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
4 Swiss cheese slices
4 sesame seeded potato buns
2 tablespoons butter, softened
1 head Bibb lettuce
1/2 cup kimchi
1/2 teaspoon vegetable oil
Directions
  1. Form the ground elk into four burger patties. Place the patties on a small baking tray and season with salt, black pepper, cumin and garlic powder on both sides.
  2. Heat a grill or skillet over medium-high heat. If using a skillet, lightly oil it to prevent sticking.
  3. Place the burger patties onto the grill or skillet. Cook for about 3-4 minutes on each side, or until cooked medium. During the last minute of cooking, place a slice of Swiss cheese on top of each patty and allow it to melt.
  4. While the burgers are cooking, toast the sesame potato buns either on the grill or in a toaster. Once toasted, spread a thin layer of butter on the cut sides of each bun.
  5. To assemble the burgers, place the burger patties with the melted Swiss cheese on the bottom half of each bun. Then, place a leaf of Bibb lettuce on top of the patty.
  6. Add a generous spoonful of kimchi on top of the lettuce and top with the buns.
