FOR THE TUNA SALAD: 5-ounce can Wild Planet Wild Albacore Tuna, water packed, not drained
1 tablespoon capers
2 tablespoons white onion, chopped
3 tablespoons celery, finely chopped
1 tablespoon fresh parsley, finely chopped
1/2 teaspoon Dijon mustard
1 tablespoon L&B sunflower seeds, raw, unsalted
1 tablespoon California Olive Ranch Olive Oil
2 teaspoons fresh lemon juice
TO SERVE: 2 cups mixed greens, divided
1/2 cup cherry tomatoes, sliced, divided
1/2 medium avocado, sliced, divided
Salt, to taste
Pepper, to taste
Directions
- Mix all of the ingredients except for the mixed greens, avocado and tomatoes in a large bowl.
- Serve tuna salad over mixed greens with tomatoes and avocado.
