Dill Pickle Arnie Palmer Drink

Ingredients
FOR THE PICKLE SIMPLE SYRUP: ½ cup pickle brine, plus more for rimming glasses
½ cup granulated sugar
FOR THE ARNIE PALMER: 5 black tea bags
2 cups crushed ice, plus more for individual glasses
½ cup freshly squeezed lemon juice, plus 1 wedge for garnish
¾ cup pickle simple syrup (recipe above)
4 dill pickle spears
2 tablespoons Tajin Clasico Seasoning
Directions
  1. TO MAKE THE PICKLE SYRUP: In a small saucepan, combine ½ cup water, the pickle brine and sugar and bring to a boil over medium-high heat. Stir until the sugar has dissolved, 3 to 4 minutes. Remove the pot from the heat and let cool for 10 minutes.

  2. TO MAKE THE ARNIE PALMER: In a heatproof medium pitcher, steep the black tea bags in 2 cups of boiling water and brew for 5 minutes. Remove tea bags and let cool. 

  3. Add ice, lemon juice, 1 cup water and the pickle simple syrup. Taste and adjust the sweetness by adding 1 tablespoon more of pickle syrup at a time. 

  4. TO SERVE: Rotate the rim of each glass through pickle brine on a shallow plate and then rotate through Tajín on another plate until all 4 glasses are garnished. Fill all glasses to the top with ice, top with the Arnie Palmer, garnish with a pickle spear and enjoy!
