Grilled Salmon with Avocado Mango Salsa

Ingredients
FOR THE GRILLED SALMON: 4 (approximately) 6-ounce salmon fillets, skin on
2 tablespoons olive oil
Juice from 1 lime
1 teaspoon chili powder
¼ teaspoon cumin
½ teaspoon salt
FOR THE AVOCADO MANGO SALSA: 1 avocado, diced
1 mango, peeled and diced
1 red bell pepper, seeds removed, diced
1 jalapeño, seeds removed, diced
¼ cup diced red onion
¼ cup chopped cilantro
Juice from 1 lime
½ teaspoon salt
Directions
- In a small bowl, whisk together olive oil, lime juice, chili powder, cumin and salt.
- Brush the mixture over the salmon fillets and let them marinate for 30 to 60 minutes.
- Grease the grill grates with oil.
- Heat the grill to medium-high heat.
- Once the grill is hot, place the salmon fillets on the grill, skin side down.
- Cook for 5 minutes and then flip, cooking another 3 to 5 minutes, until the salmon flakes easily.
- Serve topped with Avocado Mango Salsa.
FOR THE AVOCADO MANGO SALSA:
- In a bowl, gently comibne all the salsa ingredients.
