Peaches & Cream Oatmeal Cookies

Ingredients
1 cup butter, softened
2/3 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
2 1/4 cups all-purpose flour
1 teaspoon baking soda
3.4 ounces instant vanilla pudding mix
1 1/3 cups white chocolate chips
8 - 1.23-ounce packets peaches & cream instant oatmeal
Directions
- Cream together the butter, brown sugar, white sugar, eggs and vanilla. Then add in the salt, flour, baking soda, pudding mix and oatmeal packets. Stir until all is mixed well.
- Fold in the white chocolate chips. Chill the dough in the refrigerator for about 1 hour.
- Heat oven to 350 F.
- Roll dough into 1 1/4-inch balls and place on an ungreased cookie sheet. Bake for 9-11 minutes.
