Avocado, Watermelon & Cantaloupe Salad

2 ripe California avocados, seeded, peeled and cubed
2 tablespoons fresh lemon juice, divided
12 ounces cubed seedless watermelon
12 ounces cubed cantaloupe
1 tablespoon honey, or more to taste
1/4 teaspoon chile lime seasoning (like Tajin) or sea salt
Mint leaves, for garnish (optional)
Directions
- In a bowl, pour half the lemon juice over the avocado cubes and gently toss to coat all the cubes.
- On a rectangular serving platter, arrange cubes of watermelon, cantaloupe and avocados in alternating rows.
- Combine the honey and remaining lemon juice, then drizzle over the fruit.
- Sprinkle with chile lime seasoning and mint leaves, if using, and serve.
CHEF'S TIP: Use mango in place of the cantaloupe or add honeydew or other melons. You can also use cilantro in place of the fresh mint.
