
Grilled Cornbread with Goat Cheese, Bacon & Chives
This wonderful sweet and savory appetizer is perfect for picnics and BBQs. If you don’t have a grill, you can use a panini press, too.

Grilled Cornbread with Goat Cheese, Bacon & Chives

Ingredients
L&B Mini Cornbread Loaves
L&B Extra Virgin Olive Oil
L&B Uncured Bacon
goat cheese crumbles
fresh chives, finely diced
Directions
- Heat your grill to medium high. Slice cornbread loaves into ½-inch slices and brush each side with olive oil. Cook for 3-5 minutes per side and set aside.
- Place uncooked bacon on a sheet of heavy-duty foil and place on the top rack of the grill. Cook for 18-20 minutes, until crispy. Once cool enough to handle, finely dice the bacon strips.
- Top the cornbread slices with goat cheese, diced bacon and diced chives.
