This recipe uses ground elk in place of ground beef. Fossil Farms’ elk are grass-fed and are never given antibiotics, steroids or hormones. With a similar color, elk tastes like a cross between venison and beef. Fossil Farms is a pioneer in healthy and sustainable alternatives to conventional red meat. Ingredients
1 1-lb. package Fossil Farms Ground Elk
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
4 Swiss cheese slices
4 sesame seeded potato buns
2 tablespoons butter, softened
1 head Bibb lettuce
1/2 cup kimchi
1/2 teaspoon vegetable oil
Directions
- Form the ground elk into four burger patties. Place the patties on a small baking tray and season with salt, black pepper, cumin and garlic powder on both sides.
- Heat a grill or skillet over medium-high heat. If using a skillet, lightly oil it to prevent sticking.
- Place the burger patties onto the grill or skillet. Cook for about 3-4 minutes on each side, or until cooked medium. During the last minute of cooking, place a slice of Swiss cheese on top of each patty and allow it to melt.
- While the burgers are cooking, toast the sesame potato buns either on the grill or in a toaster. Once toasted, spread a thin layer of butter on the cut sides of each bun.
- To assemble the burgers, place the burger patties with the melted Swiss cheese on the bottom half of each bun. Then, place a leaf of Bibb lettuce on top of the patty.
- Add a generous spoonful of kimchi on top of the lettuce and top with the buns.
