Mediterranean Crispy Tortellini Salad

Ingredients
1 - 20-ounce package cheese tortellini pasta
1 tablespoon extra virgin olive oil
1 head romaine lettuce, roughly chopped
1 - 10-ounce package fresh mozzarella pearls
½ cup L&B Caesar Dressing
½ cup grated Parmesan cheese
â…“ cup seeded, small-diced cucumbers
ÂĽ cup small-diced red onion
ÂĽ cup rough-chopped kalamata olives
ÂĽ cup L&B Julienne-Cut Sun Dried Tomatoes
½ teaspoon freshly ground black pepper
Balsamic glaze, for drizzling
Directions
  1. Heat an air fryer to 400 F. In a small bowl, toss the tortellini and olive oil until well coated, then transfer the pasta to the air fryer basket.
  2. Air fry for 7 minutes, toss, and air fry for 3 minutes more, or until the tortellini are golden brown and crispy. Set aside.
  3. In a large bowl, combine the lettuce, mozzarella, L&B Caesar Dressing, Parmesan, cucumbers, onion, olives, L&B Julienne-Cut Sun Dried Tomatoes and pepper; toss to combine. Add the pasta and toss again to combine. 
  4. Garnish with more dressing, Parmesan and balsamic glaze. Serve warm.
