
Bison Chili
This recipe uses ground bison in place of ground chicken or beef. Bison is often considered “gateway game meat,” and is similar to beef in color, but has a slightly sweeter flavor.

Ingredients
1 pound Fossil Farms Ground Bison
1 large yellow onion, diced
4 cloves garlic, minced
16 ounces crushed tomatoes
1/4 cup chipotle pepper paste
2 tablespoons ground cumin
1 green bell pepper, diced
1 red bell pepper, diced
1/2 cup cilantro, chopped + more for garnish
2 tablespoons vegetable oil
2 cups beef stock
1 bay leaf
2 sprigs oregano
1 can red pinto beans
Salt, to taste
Pepper, to taste
Shredded cheese, for garnish (optional)
Sliced green onions, for garnish (optional)
Directions
- In a large pot, cook the vegetable oil and minced garlic over medium heat for about 2 minutes, or until softened and fragrant.
- Once heated, add onions and bell peppers, then stir until they caramelize and become semi-translucent, about 5 minutes.
- Add the ground bison into the pot and break up the meat, stirring until cooked through.
- Add crushed tomatoes, chipotle pepper paste, cilantro, oregano and ground cumin and mix through.
- Add the beef stock and season with salt and pepper to taste.
- Bring to a boil, reduce heat to low, cover and simmer for 25-35 minutes.
- About 10 minutes before the chili is done, add the red pinto beans and continue to simmer until they are heated through.
- To serve, top with your favorite chili accoutrement such as shredded cheese, sliced green onions or chopped cilantro.

Directions
