Brown Sugar Oatmeal Bites

Ingredients
3 cups old-fashioned oats
¼ cup whole wheat flour
¼ cup packed brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
Pinch Kosher salt
¼ cup unsalted butter, melted
½ cup milk
¼ cup maple syrup
2 large eggs
1 teaspoon vanilla extract
Directions
- Heat oven to 375ºF.
- In a large bowl, stir together the oats, flour, brown sugar, cinnamon, baking powder, and salt.
- In a medium bowl, whisk together the melted butter, milk, maple syrup, eggs, and vanilla. Stir the wet ingredients into the dry ingredients and mix until combined.
- Prepare a mini muffin pan with cooking spray or paper liners. Fill each well with batter all the way to the top and lightly tap down if needed. Bake for 15 to 20 minutes or until cooked through and golden brown.
- Let cool before removing from the pan. Leftovers can be stored in an airtight container at room temperature for up to 5 days.
